Murata Aogami1 120mm sabaki kitchen knife
Murata 120mm Sabaki is a good quality but affordable knife with a blade made of Aogami1 carbon steel eh.
Sabaki is classically a knife intended to separate meat from bone easily. The knife is not intended for bone l not for cutting though. Murat's Sabaki works great for me eh little one ä Petty utility knife ä, with which the ferry runs belching.
Murata's knives are sharpened to a very sharp point and hardened to a hardness of 61-63HRC . Due to its hardness, the blade retains its sharpness for a very long time.
