How to cut salmon with a Japanese chef's knife - watch the video

In the video, we show how a Japanese chef's knife with a stiff blade is excellent for cutting salmon. In the Sharplife studio, as usual, well-known top chef Sasu Laukkonen.

Laukkonen explains and shows the way in which a whole Salmon is disassembled and all the parts can be used.

The first use is the Japanese traditional Kataba knife, Deba. After this, Sujihiki is used, which is a slicing knife with a shallow blade.
