Ohishi SLD 210 Gyuto kitchen knife
Ohishi knives are made in Sanjo, Niigata. These knives offer very good quality and performance at a reasonable price. The blade of the knife is SLD steel, which is semi-stainless steel, with stainless cheeks (Sanmai). SLD has a pleasant biting blade feel that works well on the skins of fruits and vegetables, e.g. The blade tapers towards the tip, but is thicker at the neck in typical Sanjo style. The blade has a decent amount of mass, but it is chiseled very thin behind the blade. This thinness behind the blade is exactly the thing that gives a great cutting sensation (kireaji).
The stainless cheeks of the knife have a beautiful hammer finish (Tsuchime) which helps in removing food and is also very stylish. Really good standard Gyuto dimensions for everyday kitchen work. One of our most popular knives and a joy to cook with.
